Sorry I don't have any good ways to track hours as we are not required too, but I would think that you will be including alot of your everyday life in those hours too.

Yes, handwriting is included as copywork in Beyond. I look at as my son know how to write now he needs practice and that is what the copy work is.

I have started LHTH with my 3 year old son. I am just doing it 3 or so days a week. I am guessing it will take about 1.5 years to get through. Then he will be almost 5 and ready to start Little Hearts. He was also participating in all the activites in Little Hearts with big brother.

I like that idea. I have not thought about how I will go about selecting books once we start DITHOR. I really like your idea of having preselected books at the appropriate reading level and the child can choose which they will read. I would agree that my son would be more willing to read if he helps...
