I called it Art in Nature, and classified it as a Fine Arts course, instead of science.
You may want to check what your state requires for credit hours, and add drawing time or other studies/hours as needed. (Ours is 60 hrs for a half credit.)

Sounds like a great idea. I would go ahead with Beyond for her, from whatever point you deem appropriate, but don't cut too much. Preparing is often best for 4th, not 3rd, so doing Bigger starting next fall would not have her "behind" at all.
