I like the stuff by Answers in Genesis. They are very strongly young-earth so as long as you are of that persuasion I think you'll like their stuff. It isn't cheap, but I'd say it's a sound investment.

Ditto everyone else :) We've started cursive with my 6 year old daughter. She hates printing, but begs to write in cursive. She does a great job and since her printing was quite neat for her age we went ahead. It's going so well! Part of what I'm loving about homeschool is I can move her at her pace...

The guide will contain instructions for all subjects, but it is up to you what you do! However, I think if you skip the history, you're missing the core of the program. I highly recommend the fictional book Across Five Aprils. It brings out a lot of aspects of the war that are often forgotten like the fact that even Lincoln's own party often despised him and thought he was a fool. There are different ways to do this, but the best explanation I received was to plan for 17 units one year and 17 units the second. This made so much sense to me!
